Bacon Corn Chowder

Ingredients

  • 1 bag of frozen corn
  • 1 medium onion 
  • 28 oz chicken broth
  • 3 red potatoes, #3 cone or cubed 
  • 1 cup milk
  • ½  cup all purpose flour
  • Salt and pepper to taste 
  • 3 slices bacon
  • Minced fresh parsley (optional)

Instructions

  1. Preheat MP5 (crock pot) to 325 degrees. 
  2. Cut onion on #3 cone. 
  3. Dice 3 slices of bacon. 
  4. Sauté onion and bacon until browned in MP5.
  5. Add broth and potatoes.
  6. Reduce heat to 225 degrees.
  7. When soup begins to boil, add corn, ½ cup of the milk, salt, and pepper.
  8. In a different bowl, whisk flour and the other ½ cup of milk until smooth
  9. Stir mixture into the MP5.
  10. Cook for another 5 minutes or until it thickens.
