Chicken Veggie Pesto


  • 2-3 chicken thighs or 1 large chicken
  • breast, diced
  • 1 cup broccoli, chopped and stems #2 cone
  • 1 cup asparagus, cut into 1” pieces
  • ½ cup green beans, cut into 1” pieces
  • 1 cup kale
  • 2-3 tbsp. pesto (or to taste)
  • 1 cup feta

Cooking Instructions:

  • Preheat Pan to Medium-High
  • Sauté chicken until cooked through
  • Add green beans, broccoli, asparagus, and kale and medium-click-low for 8-12 minutes
  • Stir in pesto and feta!
