
Ingredients
- 4-5 cups noodles, cooked and cooled
- 1 red bell pepper, #3 cone
- 1-2 carrots, #2 cone
- ¼ red onion, #2 cone
- ¼ cup cilantro, chopped
- 1 cup cotija Mexican cheese, #3 cone
- 3 corn on the cob, chopped
Dressing Ingredients
- ½ cup mayo
- ½ cup Greek yogurt
- 2-3 limes, juiced and zested
- ½ tbsp chili powder
- Garlic salt, to taste
- ½ tbsp smoked paprika
- Optional: Tajin sprinkled on top
Instructions
- Boil water and cook pasta noodles per package instructions. Rinse and let cool down.
- Add the corn on the cob to a piece of cookware along with 2-3 tbsp of water. Medium-click-low for 12-15 minutes. Cool slightly and cut corn from the cob.
- Combine salad dressing ingredients and set aside.
- In a separate bowl, add cooked and cooled noodles, carrots, bell pepper, red onions, cilantro, cotija cheese, and corn. Top with salad dressing and stir. If desired, add a sprinkle or two of Tajin.
