Peanut Thai Salad

Ingredients

Salad Dressing Ingredients: 

  • ⅓  cup peanut butter 
  • 1-2″ ginger, #1 cone 
  • 1-2 tbsp coconut sugar 
  • 2-3 tbsp amino acids 
  • 3-4 tbsp rice vinegar

Salad Veggie Ingredients: 

  • 1 cup green cabbage, #4 cone 
  • 1 cup red cabbage, #3 cone 
  • 1 carrot, #2, #4, #5 cone 
  • 1 English cucumber, #4 cone 
  • 1 bunch green onion, chopped

Instructions

  1. Slice the green cabbage using the #4 cone and add to a large mixing bowl.
  2. Slice the red cabbage using the #3 cone.
  3. Slice the carrot using the #2, #4, or #5 cone, depending on your preferred thickness.
  4. Slice the English cucumber using the #4 cone.
  5. Add the chopped green onions and toss the vegetables together.
  6. In a small bowl, whisk together the peanut butter, ginger processed with the #1 cone, coconut sugar, amino acids, and rice vinegar until smooth.
  7. Add a small amount of water if needed to thin the dressing.
  8. Pour the dressing over the salad and toss well to coat.
  9. Serve immediately or chill before serving.
