Mechado

Ingredients

  • 2 lbs. beef, round chuck 
  • 1 strip pork fat 
  • 5 cloves garlic 
  • 1 large onion 
  • 1⁄2 small can tomato sauce 
  • 1 ⁄3 cup soy sauce 
  • 2 tbsp. cooking oil 
  • 3 large potatoes, quartered 
  • 3 tbsp. vinegar 

Instructions

  1. Wash beef and piece of pork fat, then make a hole through the beef and insert strip of fat into hole. 
  2. Preheat saucepan, brown beef all over by pressing meat on bottom of saucepan with fork or spatula, then set aside. 
  3. Sauté garlic and onion, add beef then pour tomato sauce, soy sauce and vinegar. 
  4. Cover with pudding pan. 
  5. Cook for 40 minutes, test for tenderness by pricking meat with fork. 
  6. If meat is not yet tender, put cover back on and continue cooking for 30 minutes more until tender. 
  7. Add potatoes before meat becomes tender. 
  8. Use drippings as gravy mashing a few pieces of cooked potatoes
