Jambalaya

Ingredients

  • 8 oz. andouille sausage, sliced in ” slices 
  • 2 chicken breast, cubed to bite sizes 
  • 2 tbsp. ground paprika 
  • 1 tbsp. ground cumin 
  • ½ tsp. cayenne pepper 
  • 1 can diced tomatoes
  • 2-3 stalks celery, #3 cone 
  • 1 bell pepper, #3 cone 
  • 1 med onion, #3 cone 
  • 2-3 bay leaves 
  • 1 cup uncooked rice 
  • 3 cups chicken broth 
  • Salt and pepper to taste

Instructions

  1. Preheat Pan to medium-high 
  2. Brown cubed chicken, remove from pot and set aside 
  3. Sauté sausage over medium heat for about 5-6 minutes 
  4. Stir paprika, cumin, and cayenne for 1 minute 
  5. Stir in celery, bell pepper, and onions for 2 minutes
  6. Stir in tomatoes, chicken and rice. Once combined add chicken stock and bring to a simmer then turn to heat to low. 
  7. Place bay leaves on top of the jambalaya, cover and cook until rice is just tender (al dente) about 20 minutes 
  8. Salt and pepper to taste 
  9. Sauté sausage and onion until browned 
  10. Add potatoes, cabbage, tomatoes, beets, water, garlic salt, and bay leaves
  11. Medium-click-low for 20+ minutes
