
Ingredients
- 8 oz. andouille sausage, sliced in ” slices
- 2 chicken breast, cubed to bite sizes
- 2 tbsp. ground paprika
- 1 tbsp. ground cumin
- ½ tsp. cayenne pepper
- 1 can diced tomatoes
- 2-3 stalks celery, #3 cone
- 1 bell pepper, #3 cone
- 1 med onion, #3 cone
- 2-3 bay leaves
- 1 cup uncooked rice
- 3 cups chicken broth
- Salt and pepper to taste
Instructions
- Preheat Pan to medium-high
- Brown cubed chicken, remove from pot and set aside
- Sauté sausage over medium heat for about 5-6 minutes
- Stir paprika, cumin, and cayenne for 1 minute
- Stir in celery, bell pepper, and onions for 2 minutes
- Stir in tomatoes, chicken and rice. Once combined add chicken stock and bring to a simmer then turn to heat to low.
- Place bay leaves on top of the jambalaya, cover and cook until rice is just tender (al dente) about 20 minutes
- Salt and pepper to taste
- Sauté sausage and onion until browned
- Add potatoes, cabbage, tomatoes, beets, water, garlic salt, and bay leaves
- Medium-click-low for 20+ minutes
