Green Goddess Salad

Ingredients

Salad Base Ingredients:

  • ½ head green cabbage, #2 cone
  • 1 cucumber, #2 cone

Blended Sauce Ingredients:

  • 1 cup cashews 
  • 1 small shallot 
  • 1 lemon, juiced 
  • Garlic salt to taste 
  • 1 cup basil
  • 1 cup spinach 
  • 1 bunch of green onions 
  • ⅛  cup nutritional yeast 
  • ¼  cup rice vinegar 
  • Enough water to thin out dressing

Instructions

  1. Slice the green cabbage using the #2 cone and add to a large bowl.
  2. Slice the cucumber using the #2 cone and add to the bowl.
  3. Add the cashews, shallot, lemon juice, garlic salt, basil, spinach, green onions, nutritional yeast, and rice vinegar to a blender.
  4. Blend until smooth, adding water a little at a time until the dressing reaches your desired consistency.
  5. Pour the dressing over the cabbage and cucumber. Toss well until evenly coated.
  6. Serve immediately or chill before serving.
