Ingredients
Vegetables & Mix-ins:
- 1 daikon radish, #2 cone
- 1 carrot, #2 cone
- 1 zucchini, #2 cone
- ¼ head green cabbage, #5 cone
- ¼ head purple cabbage, #5 cone
- ½ head Napa cabbage, finely sliced
- 1 cup cilantro, finely chopped
- 2 green onions, sliced
- 1 green apple, #2 cone
- 1 lemon, juiced
- ½ cup roasted salted pumpkin seeds
Dressing
- ½ cup rice vinegar
- Juice of 1 lemon
- 1 tbsp soy sauce or Bragg Liquid Aminos
- 1 tbsp sambal chili paste
- 1 tbsp honey
- Splash of sesame oil
Instructions
- Using your Saladmaster cones, process the daikon radish, carrot, zucchini, green cabbage, purple cabbage, and apple as indicated. Finely slice the Napa cabbage, then add all prepared vegetables into a large mixing bowl along with the chopped cilantro and green onions.
- Squeeze fresh lemon juice directly over the vegetables and toss gently. This helps keep the ingredients fresh and adds a light, bright flavor before dressing.
- In a separate bowl, combine rice vinegar, lemon juice, soy sauce (or liquid aminos), sambal chili paste, honey, and a splash of sesame oil. Mix well until fully combined.
- Pour the dressing over the salad and toss thoroughly until all ingredients are evenly coated. Add the roasted pumpkin seeds and give it one final gentle toss.
- Serve immediately for a crisp, fresh texture or let it sit for 30 minutes to 1 hour to deepen the flavor. Keeps well in the fridge for 2–3 days.
