Coach Cam’s Amazing Salad

Ingredients

Vegetables & Mix-ins:

  • 1 daikon radish, #2 cone
  • 1 carrot, #2 cone
  • 1 zucchini, #2 cone
  • ¼ head green cabbage, #5 cone
  • ¼ head purple cabbage, #5 cone
  • ½ head Napa cabbage, finely sliced
  • 1 cup cilantro, finely chopped
  • 2 green onions, sliced
  • 1 green apple, #2 cone
  • 1 lemon, juiced
  • ½ cup roasted salted pumpkin seeds

Dressing

  • ½ cup rice vinegar
  • Juice of 1 lemon
  • 1 tbsp soy sauce or Bragg Liquid Aminos
  • 1 tbsp sambal chili paste
  • 1 tbsp honey
  • Splash of sesame oil

Instructions

  1. Using your Saladmaster cones, process the daikon radish, carrot, zucchini, green cabbage, purple cabbage, and apple as indicated. Finely slice the Napa cabbage, then add all prepared vegetables into a large mixing bowl along with the chopped cilantro and green onions.
  2. Squeeze fresh lemon juice directly over the vegetables and toss gently. This helps keep the ingredients fresh and adds a light, bright flavor before dressing.
  3. In a separate bowl, combine rice vinegar, lemon juice, soy sauce (or liquid aminos), sambal chili paste, honey, and a splash of sesame oil. Mix well until fully combined.
  4. Pour the dressing over the salad and toss thoroughly until all ingredients are evenly coated. Add the roasted pumpkin seeds and give it one final gentle toss.
  5. Serve immediately for a crisp, fresh texture or let it sit for 30 minutes to 1 hour to deepen the flavor. Keeps well in the fridge for 2–3 days.
