Butternut Squash Mac & Cheese

Ingredients

  • 2-3 cups butternut squash, #2 or #3 cone
  • 1 box rotini or mac noodles 
  • Enough chicken broth or water to cover noodles
  • ½ tbsp pumpkin seasoning
  • 1-2 cups colby jack cheese or cheese of choice, #2 cone

Instructions

  1. Add noodles in the bottom of the pan.
  2. Cover noodles with chicken broth or water – just enough to cover the noodles. 
  3. Add butternut squash on top. Peeling the butternut squash is optional. We just place it right on the machine with the skin on (so fast and easy).
  4. Add the almond milk, chicken bouillon, pumpkin seasoning, flour, butternut squash, and cheese to a large bowl or pan. Stir everything together until evenly combined.
  5. Cover and let the mixture sit in the refrigerator for 20 minutes before cooking.
  6. Cook according to your preferred pasta cooking method until the noodles are tender and the sauce is creamy.
  7. If the flavor is too sweet, stir in the juice of half a lime. If the flavor is too tart, add sliced apples using the #2 cone to balance the sweetness.
