Borscht

Ingredients

  • 1 package kielbasa sausage, sliced 
  • 1 onion, #3 cone 
  • 2-3 Yukon Gold potatoes, #3 cone 
  • 2 – 16oz canned diced tomatoes 
  • ½  head red cabbage, #4 cone 
  • 1¼ head green cabbage, #4 cone 
  • 1 red beet, #3 cone 
  • Garlic salt to taste 
  • Enough water to cover the veggies 
  • 2-3 bay leaves 
  • Garnish: Sour cream, cilantro, hemp seeds 

Instructions

  1. Preheat the pan to medium-high heat.
  2. Add the sliced kielbasa sausage and sliced onion using the #3 cone. Sauté until the sausage is lightly browned and the onion is softened.
  3. Add potatoes, cabbage, tomatoes, beets, water, garlic salt, and bay leaves.
  4. Pour in enough water to cover the vegetables.
  5. Season with garlic salt and add the bay leaves.
  6. Stir well, cover with the lid, and cook on medium-click-low for 20+ minutes.
  7. Remove the bay leaves before serving.
  8. Garnish with sour cream, cilantro, and hemp seeds, if desired.
