Simple Chicken Bicol Express

Ingredients

  • 1  lb. chicken cut into bite sized pieces (recommend thighs)
  • 1 medium onion,  thinly sliced
  • 4 cloves garlic, minced
  • 1” fresh ginger,  julienned or minced
  • 2 -3 jalapenos, thinly slided (include seeds for more heat)
  • 5 cups kale, stems removed and roughly chopped
  • 1 14oz coconut milk
  • 1 tsp salt to taste
  • ¼ to 1 tsp. ground peppers to taste

Instructions

  1. Preheat pan to medium- high and saute chicken with onions, garlic, salt and pepper for 3-5 minutes
  2. Add kale, jalapeno, coconut milk and medium-click-low for 10-12 minutes or until soft

Cooking Tips

  • Use chicken thighs for more flavor and tenderness; breast work fine but can dry out faster
  • To increase heat, keep jalapeno seeds or add an extra. To reduce heat, remove seeds and membranes
  • If you want a closer to traditional Bicol Express flavor and have it available, add 1-2 teaspoons of shrimp paste of first sauce with the coconut milk 
  • To thicken the sauce more, simmer a bit longer. To thin it out, add water or broth.
